Got leftover turkey? You're not alone. Bake a loaf of bread and enjoy this super tasty and way too easy salad on an open-faced sandwich. Another great recipe from our dear Production Manager Christian.
French Lentil, Turkey and Sunflower Seed Salad
1 cup of roasted turkey, diced
¼ of a carrot, diced
1 green onion, diced
¼ stalk of celery, diced
½ cup of cooked GRAIN French Lentils (cooked and cooled )
¼ cup of toasted sunflower seeds
1 tbsp of chili oil
½ tbsp of dijon mustard
½ tbsp of cumin
1 tbsp lemon juice
½ cup mayonnaise
½ tsp ground pepper
Place all ingredients into a bowl and mix together well. Pile on top of your favourite toasted bread and devour.
