Red Fife Strawberry Shortcake

This beautifully simple sheet cake is another celebration of the all too short local strawberry season, a crowd-pleasing recipe to serve alongside this Strawberry Custard Tart. We're so excited to expand our repertoire of simple sheet cake recipes for the summer entertaining season. 

Red Fife Strawberry Shortcake

2.5 cup GRAIN Organic Sifted Red Fife Wheat Flour
1/2 cup brown sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 cup unsalted butter, cold and cubed
1 cup cold buttermilk
1 large egg
1 large egg yolk
1 tsp vanilla extract
1 egg white
turbinado sugar for garnish

500 ml whipped cream
1 tbsp maple syrup
1 tsp vanilla extract
2 lb fresh strawberries, washed and stems removed
sugar, for garnish

Preheat oven to 350°F. Lightly grease a rectangle 9x13-inch pan.

To make the shortcake, combine flour, brown sugar, baking powder, baking soda and salt in a food processor bowl. Pulse to mix together. Add cubed butter and pulse until the mixture resembles pea-size bits. Transfer to a large bowl. 

In a small bowl, whisk together buttermilk, egg, egg yolk and vanilla until combined. Add this to the flour mixture and lightly mix together until just combined, do not overmix. There should be no dry patches of flour, add more buttermilk if necessary. Transfer dough to the prepared cake pan and press into an even layer.

To create an egg wash, lightly whip up the egg white with 1 tbsp water with a fork. Using a pastry brush, brush the top of the cake with egg wash and sprinkle liberally with turbinado sugar. Bake for 15-20 minutes until golden brown. Remove from oven and allow to cool completely. 

Whip cream until stiff peaks, about 3-4 minutes, drizzling in maple syrup and vanilla extract. Half or quarter strawberries and place in a large bowl. Sprinkle lightly with sugar and let sit for a few minutes. Assemble the strawberry shortcake just before serving, spread whipped cream on top of cake and pile berries on top.
