This tasty salad will wake up your taste buds and make you feel amazing too. The combination of highly nutritious Lacinato kale, roasted nuts and feta cheese is addicting. Perfect for packed lunches and potlucks!
Marinated French Lentil & Kale Salad:
2 cups cooked GRAIN French Lentils
1 bunch of Lacinato kale, sliced thinly
1 red bell pepper, seeded and chopped finely
1 cup Pistachios, toasted
1 cup feta, cubed
1/4 cup Olive Oil
1/4 cup white wine vinegar
1/2 tsp salt
2 tbsp dijon mustard
1 tbsp sugar or male syrup
1/2 cup fresh herbs such as cilantro, basil, or parsley
Pre-cook your GRAIN French lentils using our soak & steam method. Soak the French Lentils for 4-20 hours, then drain and rinse. Steam in a vegetable steamer basket for 20-25 minutes, until tender but still firm. Remove from the steamer and allow to cool slightly. Toss with olive oil to coat.
Combine cooked French lentils, kale, red pepper, pistachios, fresh herbs, and feta in a mixing bowl. In a small bowl, whisk together the oil, vinegar, mustard, sugar or maple syrup, and salt. Pour over the salad ingredients and mix well. Allow to marinate for a minimum of 30 minutes before serving, if possible. This will allow the kale to wilt and soften.
